01 · The Beginning
What kind of ramen do we genuinely want to eat, every day, in London?
We weren't looking for something louder or more extreme. We were looking for ramen that felt honest.
02 · The Search
That search led us back to Sapporo
In Hokkaido, Japan’s northern island — a place where food is shaped by cold winters, patience, and respect for ingredients. Where flavour is built slowly, and nothing is added without reason.
Sapporo ramen is not about performance. It is about depth. It is about a bowl that warms you completely — from the first sip to the last noodle.
Part of that depth comes down to a single ingredient: the noodle itself. In Sapporo, there is one name that matters above all others — Nishiyama Seimen. Making noodles in Hokkaido since 1953, Nishiyama noodles are the foundation of authentic Sapporo ramen. Their distinct texture, their weight in the broth, the way they hold up to the end of the bowl — there is nothing quite like them.
We brought them to London. As far as we know, we are the only establishment in the city using them. If you want to claim you serve authentic Sapporo ramen, this is a must-have ingredient. For us, it was never a question.
That is what we came back to London to make.
